Lemon Blueberry Muffins

Lemon Blueberry Muffins

1 1/2 C Blueberries
1 1/2 C Flour
3/4 C Sugar
1/3 C Vegetable Oil
1 teaspoon Vanilla
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
Zest of 1 lemon, chopped
Cold Milk

Preheat oven to 300 degrees. In a large bowl mix together flour, sugar, salt and baking powder
In a measuring cup add oil, egg and vanilla and mix, then add milk until all the liquid in your cup totals 1 cup.
Add liquid to dry ingredients and mix completely.
Add lemon zest and blueberries and fold in.

Bake for 17-20 minutes.

This makes about 10 muffins
