Chicken Again??

This is one of my husband's favorite dinners:

Chicken Excelsior
4 chicken breasts, skinned
1/2 C butter melted
garlic salt
1 teaspoon paprika
3 tablespoons lemon juice
1 C sour cream at room temperature
1/2 C sherry or chicken broth
8 oubnces of mushrooms or 1 small can of mushrooms

Preheat oven to 375.
sprinkle chicken with garlic salt to taste.
Mix together melted butter, paprika and lemon juice and brush over chicken.
Bake, tented for 30 minutes brushing with remaining butter mixture occasionally.
In a bowl blend together sour cream, mushrooms and sherry or broth and pepper.
Pour over chicken for the last 15 minutes of cooking.
Cook until firm and juices run clear.

Chicken Bruschetta

This is figure friendly, easy and delicious!

6 boneless skinless chicken breast 1 Tbsp. olive oil
1/4 tsp. garlic salt
3 plum tomatoes, chopped finely
1/2 cup chopped fresh basil
1/4 cup chopped cilantro (optional)
2 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. lemon juice or olive oil
1/4 cup grated Parmesan cheese

Preheat grill.
Brush chicken with olive oil and sprinkle with garlic salt.
Place on grill, cover, and cook for 10-12 minutes until chicken is almost done, turing once.
Meanwhile, combine remaining ingredients except Parmesan cheese in a small bowl and combine.
When chicken is almost cooked, top each piece with some of the tomato mixture and sprinkle with cheese.
Cover grill and cook 2-5 minutes longer until chicken is thoroughly cooked.
